FISH CHOWDER Recipe

Ingredients
  • 1 pound lean bacon or salt pork
  • 1 onion, chopped
  • 2 pounds cooked fish
  • 2 cups water
  • 1 cup medium cream
  • 1 bay leaf
  • 4 potatoes, cubed (large)
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon thyme
  • 2 cups milk
  • Salt to taste
Directions
Cut bacon or salt pork into cubes. Brown slowly in Dutch oven. Remove. Saut onion in drippings until soft. Add water, bay leaf, cubed potatoes, black pepper and thyme into pot. Cook just until potatoes are starting to tender. Remove bay leaf. Cut fish into nice bite size pieces. For this recipe, we always used leftover fried catfish but cod fillets, bass fillets or other firm fish will work. We always had plenty fried catfish and this was a good way not to waste it. Add fish and cook 5 minutes or until potatoes are completely done and fish is heated thoroughly. Add back in the bacon or salt pork.
