Chicken Cordon Blue 5 Recipe

  • 4 chicken breasts, deboned, skinned and pounded flat
  • 4 thin sliced Swiss cheese
  • 4 slices boiled ham
  • flour
  • 1 beaten egg
  • bread crumbs
Layer Swiss cheese and ham on chicken breasts and roll up jelly roll fashion. Dip in flour, then in beaten egg, and finally in bread crumbs. Secure with tooth picks. Bake uncovered in a buttered baking dish at 350° for 35-40 minutes. Serve with the following sauce.

1/2 C. melted oleo

1 T. flour

1 T. parsley

1/2 C. milk

1/2 tsp. thyme

marjoram (optional)

2 T. white cooking wine

Melt oleo, add flour, cook a minute and stir in remaining ingredients and serve with chicken.
