Old Scottish Pudding and Dip Recipe

  • 1 1/2 cups brown sugar, divided
  • 1 tablespoon softened butter
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1/2 cup raisins
  • 1/2 cup Milk
  • 2 cups boiling water
In a medium bowl, cream together 1/2 C. brown sugar and softened butter. Sift dry ingredients in a separate bowl. Add raisins to flour mixture and toss together. Mix flour mixture, creamed sugar and butter with 1/2 C. milk. In a 9 x 9" baking pan, put 1 scant cup brown sugar and 2 C. boiling water. Stir to dissolve the sugar. Drop the batter in center and bake 25-30 minutes at 350. Serve warm.

Serves 6.
