Maple Pecan Snack Cake Recipe

Ingredients
  • Cake
  • 1 cup maple sugar
  • 1 cup reduced fat sour cream
  • 1/4 cup melted butter
  • 1 teaspoon vanilla
  • 1 egg
  • 2 1/2 cups flour 1 teaspoon baking soda
  • 1/4 cup chopped pecans
  • 1/2 teaspoon Salt
  • Frosting
  • 1 1/2 cups powdered sugar
  • 2 1/2 tablespoons maple sugar
  • 1 tablespoon whipping cream
  • 1/8 teaspoon salt
  • 1/4 cup pecans
Directions
Preheat oven 350°

In large mixing bowl combine maple syrup, sour cream, butter, vanilla and egg. Mix well. Mix dry ingredients together and combine with syrup mixture. Add nuts. Spread in 9" cake pan sprayed with oil. Bake 30 minutes.

Frosting

Beat all ingredients except nuts with mixer until smooth. Add nuts and spread over cooled cake.
