Chicken and Corn Meal Dumplings Recipe

Sweet and light, these dumplings are delicious with the added corn flavor. This old fashioned stew is perfect when it's cold outside or you're feeling under the weather.

Ingredients
  • 1 chicken
  • 2 stalks celery, diced
  • 1 carrot, sliced
  • 1 onion, diced
  • water
  • 2 tablespoons butter
  • DUMPLINGS:
  • 1 1/2 cups flour
  • 1/2 cup corn meal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

Cover chicken, celery, carrot and onion with water. Simmer until meat falls off the bone.

Remove chicken and set aside.

Strain broth into Dutch oven or large pot.

Pick chicken meat off bone and add to broth. Add butter. Bring broth to a boil.

For dumplints, mix flour, corn meal, baking powder and salt. Add milk and stir until combined.

Drop dumpling batter by tablespoons into broth.

Cut the heat to medium-low and cover for 15 minutes.

"Not a huge fan of the corn meal in the dumplings. I thought it would be amazing because I do love corn bread, but it was just too heavy and too sweet."
