Ham and Potatoes Au Gratin Recipe

  • 3 diced, peeled potatoes
  • 1 Salt
  • 1/4 onions, chopped
  • 1/4 green pepper, chopped
  • 2 Butter, divided
  • 1 fully cooked ham, chopped
  • 1/4 mayo
  • 1 flour
  • Dash of pepper
  • 3/4 Milk
  • 1 shredded cheddar cheese
Put potatoes in pot and cover with water and 1 tsp. salt. Bring to boil. Boil no longer than 8 minutes. Meanwhile, sauté onion and green pepper in 1 T. butter until tender. Drain potatoes. Combine with ham, mayo, onions, and peppers and spread in 9x13 baking dish. In saucepan, melt remaining butter. Stir in flour and pepper until smooth. Gradually add milk. Bring to a boil, stirring constantly. Cook and stir 1 minute. Stir in cheese just until melted. Pour over potato mixture. Cover and bake at 350° for 30 minutes or until bubbly.
