Easy Homemade Chicken Pot Pie Recipe

Remember those frozen pot pies you had as a kid? This will have you reminiscing but a healthier version. The sauce is creamy and flavorful and a great way to use leftover chicken, baked potatoes and vegetables. And the flaky crust is perfect.

Ingredients
  • 1 package double pie crust
  • 1/3 cup butter
  • 1/3 cup onion
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/4 cups chicken broth
  • 2/3 cup milk
  • 2 cups chicken, cooked, diced
  • 1 1/2 cups vegetables (peas, carrots, potatoes)

Preheat oven to 375 degrees F. Put bottom crust in 10" pie plate or 9x9" pan.

In a medium saucepan, melt butter; add onion and cook until tender.

Stir in flour, salt and pepper; cook for 1 minute.

Add chicken broth and milk; cook until thick.

Add chicken and vegetables, stirring to combine. Put in prepared pan. Top with remaining pastry crust. Bake for 40 minutes until golden brown and bubbly.

"Just the way I thought it would taste. I did have to use a little more S&P when serving, but I tend to like it a little saltier than most. I used Pillsbury pie crust and it was flaky and crisp."
