Fried Salmon Croquettes Recipe

Simple salmon cakes that are fried to a crisp outside with the moist and tender inside.

Ingredients
  • 1 can salmon, drained (reserve juice)
  • 1 egg, beaten
  • 1 teaspoon baking powder
  • 1/2 cup flour
  • vegetable oil
Directions
Mix salmon and egg together.

Mix baking powder, flour and salmon juice. Beat this with a fork until foamy. Add and mix well with the salmon.

Drop by 1 spoonful at a time in hot oil. Do not crowd pot. Cook until browned.

NOTE: You will have to turn them to get browned on all sides.
