Red Beans and Rice with Kielbasa Recipe

Ingredients
  • 1 pound dried red kidney beans
  • 1 tablespoon olive oil
  • 1 pound turkey kielbasa, cut into 1/4 rounds
  • 1 cup chopped onion
  • 2 stalks celery, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons chopped parsley
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons hot sauce
  • 2 cups chicken broth
  • 4 cups hot cooked white rice
Directions
Rinse Beans - Place beans in a large bowl and cover with water. soak overnight

Heat oil over medium heat in 10" sauce pan. Add kielbasa and cook until browned on both sides. Add onion, celery and garlic. Cook until onion is tender. Drain beans and add to sauce pan, add chicken broth and enough water to cover by 2 inches. Add parsley, salt and hot sauce. Cook beans until tender, 1 1/2 to 1/ 3/4 hours. Add more water if needed. Serve over rice. Serves 8 / 390 calories
