Chicken Spedini with Lemon Garlic Sauce "Amogio" Recipe

Ingredients
  • 2 cups Italian seasoned bread crumbs
  • 1/2 cup grated Romano cheese
  • 1/2 cup grated mozzarella
  • salt & pepper, to taste
  • 1 tablespoon fresh minced parsley
  • 4 cloves garlic, chopped small
  • 6 boneless, skinless chicken breast halves, pounded out to 1/4 inch thick
  • 1/2 cup olive oil
  • LEMON GARLIC SAUCE - AMOGIO
  • 1 teaspoon fresh minced parsley
  • 2 cloves cloves garlic, mashed (to taste)
  • 5 lemons (juice of lemons)
  • salt & pepper, to taste
  • 1/4 teaspoon crushed red pepper
  • 1/3 cup olive oil
  • 1/4 cup water
  • 1 teaspoon oregano
Directions
Combine all ingredients in container except for chicken, shake well. Place chicken in olive oil, then dip in bread crumb mixture. Thread chicken onto skewers place on baking plan lined with foil. Place on broiler rack 5" below flame and broil 5 minutes until golden brown. Turn and broil another 5 minutes. Repeat until done. Serve alone or topped with Lemon Garlic Sauce.

LEMON GARLIC SAUCE - AMOGIO:

Mix all ingredients. Top over chicken, if desired.
