Main Dish Meatballs Recipe

Ingredients
  • 2 pounds ground beef
  • 1/2 cup chopped onion or 3 tablespoon instant onion flakes
  • 1/2 cup uncooked Minute Rice
  • 1/2 cup cracker crumbs
  • 2/3 cup milk
  • 1 1/2 teaspoons salt (or less)
  • 1/2 teaspoon pepper
  • 1/4 teaspoon poultry seasoning
  • 3 tablespoons cooking oil
  • 2 cans cream of mushroom soup
  • 1 1/2 cups HOT water
Directions
Combine beef, onion, rice, cracker crumbs, milk, salt, pepper, seasoning. Shape into 2" balls. Brown in cooking oil in electric skillet at 360. Discard all fat. Add soup which has been diluted with the hot water. Cover and reduce heat to 220 for 1 1/2 hour, stirring occasionally. Serve with mashed potatoes! My sister would make batches of meatballs and freeze in large zip-locked bags.
