Swedish Pancakes (pannkakor) Recipe

Ingredients
  • 3 Eggs
  • 2 1/2 cups + 1 Tablespoon Milk
  • 1 cup + 1 Tablespoon Flour
  • 1 teaspoon Salt
  • 2 teaspoons sugar
  • 1 tablespoon melted butter
  • Whipped Cream
  • Jam
  • 10 inch Skillet
Directions
Beat eggs in a bowl. Add half of the milk, all the flour, sugar and salt. Beat until smooth. Mix in the rest of the milk and add the melted butter. Let batter rest for 15-30 minutes. Heat skillet on medium heat. Pour thin layer of batter into the hot buttered skillet. Batter should cover the bottom of the skillet. Pan fry for a few minutes per side or until golden brown. Serve with whipped cream and your favorite jam.
