Chicken & Vegetable Casserole Recipe

  • 4 chicken breast
  • 2 cans mixed vegetables (Drained)
  • 8 ounces sour cream
  • 1 can cream of mushroom soup
  • 1 1/2 rolls of Ritz crackers
  • 1 stick butter (or margarine)
Cook chicken breast and debone. Reserve 3/4 cup of broth. Mix chicken, vegetables, sour cream, mushroom soup and chicken broth. Butter an oblong baking dish. Crush Ritz crackers and put a layer in bottom of dish. Pour chicken mixture over crackers. Top with the remaining crushed crackers. Melt butter and pour over crackers. Sprinkle with garlic powder (optional). Bake in 350° oven until golden brown.
