Roast and Beans Recipe

Ingredients
  • 3 1/2 pounds arm or chuck roast
  • 1 pound red beans, soaked
  • 1 onion, chopped (medium)
  • 1 can Rotel tomatoes
  • 1 can green chilies (small can)
  • 4 tablespoons chili powder
  • 3 teaspoons garlic powder
  • 2 cans water
Directions
Place red beans, onion, Rotel tomatoes, green chilies, chili powder, garli powder and water in the bottom of a large roasting pan. Add your roast on top. Cover and bake for 12-13 hours at 250°. Serve with fresh cornbread. Note: This recipe is also great with a pork loin roast.
