Ingredients
6 pork chops
2 green peppers, cut into strips
1 pound sliced fresh mushrooms
2 tablespoons oil
1 clove garlic, peeled and split
1 teaspoon Salt
1/4 teaspoon pepper
1 can tomatoes (16 ounce can)
1/2 teaspoon oregano
1 teaspoon chopped parsley
Directions
Heat oil in frying pan. Lightly brown garlic and sliced mushrooms; add green pepper. Fry over moderate heat about 10 minutes. Remove and set aside. Put chops in pan and brown on both sides. Add green pepper, garlic and mushrooms. Sprinkle with salt and pepper. Add tomatoes, oregano, and parsley. Cover; simmer over low heat about 30 minutes until chops are tender. Serves 6.
