Chicken and Pepper Saute Recipe

Ingredients
  • 4 pieces chicken
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 sweet onion (large)
  • 2 cloves garlic
  • fresh basil
  • 2 tablespoons tomato paste
  • 1 can chicken broth
  • salt and pepper
  • 1 tablespoon oil
Directions
Brown chicken in 1 tbs cooking oil. Remove from skillet and set aside. Sauté 1 onion and 2 cloves garlic in same pan. Add the sliced bell peppers, cover and simmer about 4-5 minutes. Mix 2 tbs tomato paste and the chicken broth. Return chicken to skillet along with peppers, onions and garlic. Pour tomato paste and chicken broth mixture over; add fresh basil. Cover and simmer for 30-45 minutes or until chicken is done.

* I use chicken tenders and add spices to taste, oregano, parsley and Italian seasoning.
