Ingredients
2 tablespoons lemon juice
1 1/2 cups corn meal
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 cup low milk
1/4 teaspoon ground red pepper
1/4 teaspoon salt
6 catfish fillets
Directions
Heat oven to 400°. Stir lemon juice into milk and let stand a few minutes until thickened. Mix cornmeal, red pepper, and thyme and spread onto large plate. Salt and pepper each fillet. Dip the fillets into the milk mixture; coat with corn meal mixture and transfer to baking sheet. Bake for 20 minutes, then reduce heat to 350° and bake for 5 minutes more or until the crust is golden.
