Shepard's Pie 8 Recipe

  • 2 pounds lean ground beef
  • 1 onion, minced (medium)
  • 1 teaspoon Salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried parsley
  • 1 can niblet corn (14 ounce can)
  • 1 can cream style corn (14 ounce can)
  • Topping
  • 4 potatoes; peeled, cooked, and mashed (large)
  • 1 cup milk
  • 1/2 stick butter
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Salt
Preheat oven to 350. Saut beef and onion with pepper until meat is browned. Stir in salt and parsley. Spread meat mixture into bottom of oven proof casserole. Pour cream style corn evenly over meat, then spoon niblets evenly over that. Mash potatoes with butter, cheese, milk, and salt. Spread over corn. Bake until potatoes start to brown on top, and lquid bubbles around edges.
