Penne Pasta Recipe

Ingredients
  • 1 pound penne pasta cooked
  • Olive oil
  • 1 shallot
  • 1 pound asparagus cut into 1/2 inch pieces
  • 1 pint cherry tomatoes, halved
  • 2 cups cooked chopped red potatoes
  • 4 tablespoons butter
  • 1 cup heavy cream
  • Salt & pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup Parmesan cheese
Directions
Cook onion and garlic in oil 1 minute. Add asparagus and cook until tender. Add potatoes until warmed. Stir in tomatoes, heavy cream and butter. Season with salt and pepper. Add red pepper flakes and Parmesan cheese. Simmer until thickened (about 5 minutes).
