Christmas Morning Breakfast Casserole 2 Recipe

  • 2 packages Simply Shred Hash Browns (20 ounce pkgs)
  • 1 1/2 cubes margarine (melted)
  • 1 cup chopped green onion
  • 2 cups cubed ham (leftover ham from Christmas Eve dinner)
  • 1 1/2 cups shredded cheese
  • 5 eggs well beaten
  • 1/4 cup milk
  • Salt and pepper
Heat oven to 425°. Place hash browns in 9x13 pan and drizzle with melted margarine. Lightly salt and pepper. Bake for 15-20 minutes or until hash browns begin to lightly brown. Take pan from oven - lower oven temp to 375°. Sprinkle on green onion, ham and cheese. Mix eggs and milk together - then evenly pour over mixture in pan. Salt and pepper again. Return pan to oven and bake 30 minutes or until egg is cooked.

This can be made ahead of time - tastes great warmed up!
