Turkey Croquettes Recipe

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup milk
  • 1 egg, beaten
  • 1 1/2 cups ground cooked turkey
  • 1/4 cup chopped pecans
  • 1 cup seasoned mashed potatoes
  • 2 tablespoons grated onion
  • 2 tablespoons minced pimento
  • 1/2 teaspoon salt and pepper (to taste)
Melt butter; blend in flour and gradually add milk. Cook until thickened, stirring constantly. Add a little of hot mixture to egg and mix well. Stir into remaining hot mixture and cook, stirring constantly, for 1 minute. Add remaining ingredients and mix lightly. Chill thoroughly. Shape into croquettes and arrange in greased shallow baking pan. Bake at 350° for 25 to 30 minutes, until lightly browned. Serves 4.
