Ceviche de Camarà%C2%B3n Recipe

  • 1 red onion (medium)
  • 1 tomato (medium)
  • 1/2 green bell pepper
  • 2 Lemons
  • 1/2 bunch cilantro
  • 2 pounds uncooked shrimp
  • 1 tablespoon canola oil
  • salt
Slice onion, tomatoes, and pepper (thin slices) rinse onions again. Place in big enough bowl. Squeeze lemons, add salt and oil. Mix all, and kind of press the onion with a fork. Rinse and chop cilantro and add to the rest of the vegetables. Rinse shrimp, place in pain to barely boil. As soon as the shrimp is pink take out of the pan and peel it. Save some water from the shrimp. Cut shrimp in half lengthwise. Place in bowl with vegetables. Add 1/2 cup of the shrimp water you saved. Serves about 6-8 people.
