Orange Cashew Chicken 2 Recipe

  • 2 tablespoons cornstarch
  • 1/4 teaspoon ginger
  • 3/4 cup orange juice concentrate
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 1 pound chicken, boneless, skinless, diced
  • 2 tablespoons olive oil
  • 2 carrots, diced
  • 2 cups broccoli florets
  • 1/4 cup cashews
  • 2 cups cooked rice
Combine cornstarch, ginger, orange juice, honey and soy sauce; set aside.

Brown chicken in olive oil.

Add carrots and sauce mixture and cook until carrots

are tender.

Add broccoli and cashews, cook for 5-7 minutes.

Serve over rice.
