Chicken Breasts with Feta Recipe

Ingredients
  • 4 1/2 chicken breasts
  • 1/4 cup bread crumbs
  • 1/4 cup feta with basil & tomato
  • 1 1/2 teaspoons melted butter (can use more)
  • 3 cups spinach
  • 1/2 cup chopped fresh basil
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • pepper to taste
Directions
Flatten breasts, dredge in crumbs. 1T. feta in folded breast, close with toothpick. Place in baking dish, drizzle with butter. Bake uncovered 400° for 25 minutes.

Combine spinach & basil in bowl, drizzle with vinegar & oil mixture. Sprinkle pepper toss.

Serve chicken on bed of salad.
