Noodles Romanoff 2 Recipe

  • 1 package medium egg noodles (375 gallon pkg)
  • 2 cups large curd cottage cheese
  • 1 grated Cheddar cheese (2 cup 8 ounce )
  • 1 cup sour cream
  • 1 cup chopped green onions
  • 1 teaspoon Salt
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon paprika
In large pot of boiling salted water, cook noodles until al dente. Drain in colander. Rinse with cold running water; drain well and set aside.

In large bowl, combine cottage cheese, cheddar cheese, sour cream, onions, and salt. Stir in noodles and mix well. Turn into greased 8-cup casserole or baking dish. Sprinkle with Parmesan cheese and paprika. Bake in 350 oven for 25-40 minutes or until sauce bubbles. Yields 8 servings.

I usually put in two casserole dishes and freeze one for another day. To reheat 1 serving (1 C) in microwave, use full power for 90 seconds.
