Beef Lombardi 2 Recipe

  • 1 package medium egg noodles (8 ounce package)
  • 1 pound Lean Ground Beef
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dried Italian Seasoning
  • 1 can tomato paste (6 ounce can)
  • 1 can diced tomatoes (14 1/2 ounce can)
  • 1 teaspoon crushed red pepper flakes
  • 1 package cream cheese, softened (3 ounce package)
  • 1/2 cup sour cream
  • 4 green onions
  • 1/2 cup shredded Italian six-cheese blend
Preheat oven to 350 degrees. Prepare egg noodles according to package. Meanwhile, sprinkle ground beef with 1 1/4 tsp salt and 1/2 tsp Italian seasoning. Cook beef in a large skillet over medium heat until meat crumbles and is no longer pink. Stir in tomato paste, cook 2 minutes. Stir in tomatoes, 1 tsp crushed red pepper flakes, 1/2 cup water and 1/4 tsp of salt. Reduce heat to medium-low and simmer 8 minutes. In a separate bowl, mix together cooked egg noodles, cream cheese, sour cream and green onion. Place noodle mixture in the bottom of a lightly greased 11x7 inch baking dish. Top with beef mixture and sprinkle with shredded cheese. Bake for 25 minutes or until hot and bubbly.
