If you love stuffed peppers but hate all the work, this casserole is perfect. With all the delicious flavors but no steeping of the peppers!

Ingredients
  • 1 pound Ground Beef
  • 1/2 cup onion, onion
  • 1 can stewed tomatoes, cut up (16 ounce can)
  • 1 green pepper, chopped
  • 1/2 cup rice, uncooked
  • 1/2 cup water
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese

In a skillet, brown beef; drain. Transfer to a greased 2 quart casserole dish.

Combine the next 8 ingredients. Pour over the beef. Cover and bake at 350° for 1 hour or until rice is tender.

Uncover and sprinkle with the cheese; return to the oven until cheese melts, about 5 minutes.

NOTE: Spaghetti sauce can be substituted for tomatoes, Worcestershire sauce, salt and pepper. Mozzarella cheese is a very good substitute for the cheddar cheese.

"Delicious! I loved stuffed peppers but hate all the work of blanching the peppers and stuffing them. This would be much more appealing to kids, too, since the peppers are in the casserole rather than the casserole in the peppers!"
