Ingredients
1/2 package - 16 ounce - Ore-Ida frozen hash browns (country style)
1/2 pound meat - whatever you have for leftovers or like for breakfast meat (burger, ham, steak, sausage, turkey, chicken, etc.)
1 cup shredded cheese - whatever you like - I use Co-jack
8 ounces Salsa - you favorite kind
4 eggs
1/2 cup chopped onion
Directions
Cook hash browns in electric skillet according to package directions. While hash browns are cooking, in another skillet, saut onion and add meat, to either cook it or heat it through if it's already cooked. Fry 4 eggs in a splash of olive oil in another skillet on stove on very low heat until just set. Start them out way low & leave them that way! When the hash browns are done, layer ingredients on top of them as follows; meat & onions (use slotted spoon to drain if needed); salsa; eggs (gently layer); cheese. Put temp. on electric skillet at 300 & cook until cheese is melted & eggs are the way you like them - app. 5 - 7 minutes.
