Meat and Rice Burritos Recipe

  • 2 1/2 cups chicken, pork or beef, cooked and shredded
  • 1 package taco seasoning
  • 3 1/4 cups water
  • 2 tablespoons oil
  • 1 cup long-grain rice
  • 1 ounce can tomato sauce
  • 1 teaspoon lemon pepper seasoning (optional)
  • 1 tomato, chopped
  • 1/4 cup green onion, chopped
  • 8 flour tortillas, warmed (medium)
  • cheddar cheese, shredded
In a large deep skillet, combine meat, taco seasoning, and 3/4 C water. Bring to a boil; reduce heat and simmer uncovered for 10 minutes. Remove and set aside. In another skillet, heat oil. Add rice; sauté until golden. Add remaining 2 1/2 C water, tomato sauce and lemon pepper seasoning. Bring to a boil; reduce heat, cover and simmer 20 minutes. Stir in the meat mixture, tomato and green onion; blend well. Heat 5 minutes. Place a heaping 1/2 C filling on each tortilla. Fold in the sides and roll up. Place filled burritos seam-side down on a baking sheet. Sprinkle with cheese. Bake in 350° oven for 5 minutes to melt cheese.
