Salvage Seized Chocolate

Seizing can occur when even the slightest amount of water comes into contact with the melting chocolate. Seizing is when the cocoa butter separates from the solids and becomes lumpy. If this happens you may be able to salvage the chocolate by adding a small amount of vegetable oil and whisking it to regain the smoothness of melted chocolate. There are several methods that can be used for melting chocolate. One simple method is using warm water.

To use the warm water method, place the chocolate in a heatproof bowl or cup and then place the container in a shallow pan containing hot water. Allow it to sit until the chocolate has melted. Stir occasionally. This method may be slower than others but you don't run the risk of overheating or burning the chocolate.
