Have you every had just one or two pieces of pumpkin pie left but you are out of whipped cream for serving it. If you have some vanilla ice cream in the freezer, follow these easy steps to create a quick and easy substitute for whipped cream.
- Place some scoops of ice cream in a small mixing bowl. One cup of ice cream will produce approximately one and a half cups of whipped cream. Allow it to thaw until you can easily stir it but it still has some thickness to it.
- Beat on medium-high until it is smooth and forms stiff peaks.
- Add a spoonful to the top of the pie immediately and serve. The whipped ice cream will have a texture and taste very similar to whipped cream.
