Begin by cutting a circle around the stem of the pepper, making it the size you want the opening to be. Pull out the stem and ribs. Scrape the cavity clean using a spoon. Rinse the pepper inside and out with cold water to remove any remaining seeds and to clean the outside. The pepper is new ready to stuff with stuffing or dip.
