Chicken Vegetable Soup - Southwest Style |

Mildly seasoned and filled with a variety of beans and vegetables, this type of soup is a combination of many ingredients often found in Mexican or southwestern U.S. cooking. Southwest-Style Chicken Vegetable Soup is made with pea beans, dried black beans, pinto beans, diced tomatoes, green peppers, red peppers, celery, carrots, onions, garlic, bits of chicken meat, and parsley, combined with chicken stock and flavorings. It is a hearty and warming soup to serve for parties with a Mexican theme or for lunch and dinners when an enjoyable combination of ingredients with a spicy overtone is desired.
