Friesago Cheese  
A domestic farmstead type of cheese made from sheep's milk that is formed into 10 pound wheels of cheese. Mild in flavor, Friesago cheese has a mellow nutty taste with a smooth creamy texture, derived from the milk of sheep grazing on grasses grown in a cooler northern climate. This cheese is similar to cheeses such as Manchego, Romano, white cheddar, Parmesan, and Monterey jack, which could be substituted for most uses if necessary.
