Golden Raspberry  
A small, deep colored berry with a tender texture, a sweet delicate taste and a pleasant aroma. Harvested from prickly shrubs related to the rose family and native to North America, the Golden Raspberry is not a common berry and is most often produced in limited quantities to be served as a dessert berry. This variety has a bright gold to orange color, a typical raspberry texture and a plump round meaty fruit and a flavor that is sweeter than the red variety with a slight honey-like overtone. When selecting raspberries, choose those that have a deep color, a good aroma, and are slightly soft but firmer than the red raspberry. To store, place unwashed berries in a single layer, on a tray or platter that is lined with paper towels and store uncovered in the refrigerator for a few days. When ready to prepare, wash the berries but do not allow them to sit in water, quickly washing and removing from the water so they can begin to dry.
