A Greek dish that may be referred to as a spinach pie, which is very similar to a quiche however, with more spinach and fewer eggs. This traditional Greek food is made with spinach, feta cheese, cottage cheese, eggs, green onions, herbs, and spices. The spinach, onions and herbs are sautéed in butter and olive oil. They are then combined with the other ingredients that include eggs and made into a mixture that is poured into a phyllo dough pie shell and baked. Spinach Pie can be made as small bite-sized servings, enclosed individual pasty shell servings, or pie shell sized dishes to be cut and served in pie-shaped wedges. Smaller bite-sized pastries are served as appetizers, individual and conveniently enclosed pastries are served like a sandwich or a side dish while the full pie shell prepared pies are made to be served as a main dish piece of pie wedge that is often accompanied by a salad. Spanakopita may also be referred to as spanakopeta.
