The Italian word for "hunter" that refers to the manner of food preparation and the ingredients typically used for game dishes. The main ingredient is the meat, which may be rabbit, chicken, pork, turkey, wildfowl, alligator, lamb, or veal. The meat is sautéed and slowly cooked with mushrooms, tomatoes, herbs, onions, wine, and other seasonings that help enhance the flavor. Food dishes made in this manner are also known as cacciatore, such as chicken cacciatore, or in France they are referred to as a la "chasseur." Similarly, dry sausages such as Italian cacciatorini are commonly thought of as hunter style salami, since it is made as a small rustic salami to be carried in hunter's pockets and eaten as a lunch meal.
