A French cow's milk cheese with an off-white color, soft and creamy texture, and an off-white natural rind. The cheese has a high quantity of cream, which gives it a buttery, sweet, and slightly nutty flavor. As the cheese ages, it takes on the aroma of mushrooms. Boursault is sold in short cylinder shapes and is suitable as an hors d'oeuvre or appetizer.
