Kumquat  
A tiny round or oval citrus fruit that resembles a very small orange. With a thin rind and flesh that are both edible, the Kumquat flavor is balanced by the sweet tasting rind that offsets the very tart, sour-orange flavor of the inner flesh. Kumquats can be eaten raw, candied, used in preserves, or pickled. They go well in sauces, chutneys, and marmalades served with wild game, poultry, beef, or pork. When selecting kumquats, look for fruit with no blemishes, but if slightly yellowed it only affects appearance. They can last several days at room temperature or several weeks when stored in a refrigerator.
