A rich cake that contains an assortment of candied fruits, nuts, and spices and is traditionally prepared and served during winter holidays. There are many versions of fruitcake such as dark varieties that are made with molasses and brown sugar with ingredients such as walnuts, raisins, and dates. Lighter colored fruitcakes are made with granulated sugar with ingredients such as golden raisins, peaches, apricots, apples, and almonds. Most fruitcakes are moistened with brandy after they are slowly baked and then wrapped in cheesecloth and aluminum foil, which helps to preserve them for extended periods.
