Plain, Sourdough and Wheat English Muffins
 
A round, leavened bread that is usually about four inches in diameter and is cooked on a hot griddle instead of oven baked, giving it a flattened appearance. This bread has an open-crumb texture full of air holes. When this muffin is produced, it is slit around the outer edges going into the bread only a small amount. This allows the person eating the muffin to pull it apart, creating a roughened surface on both sides of the muffin that provides little pockets for butter, honey, jam, and similar toppings. It is often served at breakfast and is available in a variety of flavors such as cornmeal, cinnamon, raisin, sourdough, or whole wheat.
