Cuts of beef that have been cured or pickled with a salt brine solution and then cooked. The beef brisket is most often used for corned beef, but meat from the round, rump, and at times, the tongue may also be used. When served, it is sliced thin for sandwiches or used as a main dish. It is often prepared with cooked cabbage and many people like it combined with hash.
