Tuscan Lemon Chicken - Recipe

This chicken is marinated with lemon, garlic and rosemary. Perfect served over a bed of greens with a slice of crusty bread.

Directions
Sprinkle the chicken with salt on each side. Combine the olive oil, lemon zest, lemon juice, garlic, rosemary and pepper. Place the chicken in glass dish, pour the lemon marinade over the chicken, turning in dish to coat. Refrigerate overnight. Turn the chicken two or three times while marinating.

When ready to cook, add olive oil to pan and brown chicken on both sides; cook for 5 minutes on each side. Put in 400 degree oven for 20-30 minutes or until chicken is no longer pink.

-6 chicken breasts,flattened
-1 teaspoon salt
- MARINADE:
-1/3 cup olive oil
-2 teaspoons lemon zest
-1/3 cup freshly squeezed lemon juice
-3 cloves garlic, minced
-1 tablespoon fresh rosemary, minced (use slightly less if using dried rosemary)
-2 teaspoons ground black pepper
