Lentil Tostadas (Vegetarian) - Recipe

Cook lentils-see directions below. Prepare vegetables and dressing. Toast bread on cookie sheet under broiler. Place one slice of toast on a plate for the base. Spoon lentils over toast, cover with dressing, mound up lettuce, tomatoes and onions, top with more dressing. Makes 8

COOKING LENTILS:

2 C. lentils

1 C. onions, sautéed

6 C. boiling water

1 1/2 tsp. salt

Examine and wash lentils. Add to rapidly boiling water. Add sautéed onions and boil gently for 30 minutes. Add salt and cook until tender, about 5-10 minutes longer.

-8 slices whole wheat bread
-4 cups cooked lentils (not soupy, seasoned)
-1 1/2 cups dressing
-4 cups chopped lettuce
-2 cups chopped tomatoes
-1/4 cup chopped green onions
- Dressing
-1/2 cup Mayonnaise
-1 cup buttermilk
-1/4 cup chopped parsley or 2 T dried parsley
-1/4 cup chopped chives or 1/4 teaspoon onion powder
-1 teaspoon lemon juice
-1/4 teaspoon salt
