Directions
Sauté onion and spices for about 10 minutes, stirring frequently. Add tomatoes, sweet potato, water, and lemon juice. Bring to a boil, reduce heat, cover, and simmer for 30 minutes. Add chickpeas, zucchini, parsley, and raisins. Simmer for another 10 minutes.

-2 tomatoes, chopped (medium)
-1 sweet potato, peeled and chopped
-1/4 cup water
-2 tablespoons Lemon Juice
-1 can chickpeas, drained and rinsed (15 ounce can)
-1 zucchini, cut into chunks (small)
-3 tablespoons parsley
-1/4 cup raisins
