Baked Rockfish with Cajun Tomato Relish - Recipe

Rockfish are a "treasure of the Chesapeake" and this moderately flavored fish has been revered for decades by Marylanders and visitors alike. The lively Cajun tomato relish is easy to prepare and a wonderful complement to this Eastern Shore delicacy.

Directions
1. Preheat oven to 375°F. Melt butter in medium skillet on medium heat. Add onion; cook and stir 2 minutes or until softened. Stir in tomatoes, Seafood Sauce and garlic. Reduce heat to low; simmer 3 minutes, stirring occasionally.

2. Place fish in single layer in lightly greased baking dish. Spoon tomato mixture over fish.

3. Bake 15 minutes or until fish flakes easily with a fork.Test Kitchen Tip: Substitute red snapper, striped bass, halibut, tilapia or cod for the rockfish.
