Mix cornstarch and sugar. Add enough milk to make a smooth paste. Heat remaining milk to a boil and slowly add the paste. Heat on low, cook until thickens, stirring constantly to prevent lumps. Pour into 8" pan, chill and cut into squares. Coconut milk: Scald milk in a saucepan. Place coconut in the milk. Stir and remove from heat. Let stand until cool. Strain mixture through a sieve lined either with cheese cloth or a thin dish towel. Squeeze out milk. Refrigerate. This milk may also be frozen for future use. Coconut milk may be available in frozen cans. NOTE: Originally haupia was prepared with arrow root mixed with coconut cream. |
