Rock Star Tuna Fillet - Recipe

Fresh thick Yellowfin, or Blackfin Tuna works well for this recipe. This is such a delicacy, that you want to be able to taste the flavor and not spend time disguising it!

Directions
  • Serving: 1/4+ pounds per person


    Seasoning Steps:
  • Brush each tuna steak with melted butter and sprinkle with Old Bay Seasoning or create your own:
  • Sprinkle on salt and fresh ground pepper to taste
  • Spritz of fresh lemon juice
  • Sprinkle of chili powder
  • Sprinkle of garlic powder
  • Let Tuna steaks rest for 10 minutes with seasoned butter.


  • GRILLING:
  • Put tuna on pre-heated GrillGrates (8 to 10 minutes), Low-Low/Med heat. For charcoal, preheat your GrillGrates after the red hot peak, gray coals only (8-10 minutes), lid closed.
  • Grill tuna approx. 8-10 minutes total grilling time on Low/Med Heat, lid down. Timing depends on how hot your grill is and how thick the tuna cut is.
  • Turn after 8 minutes. See note below.


  • NOTE: Judge the initial sear marks to get an indication of how hot you are cooking. If the sear marks are dark to black on the first flip, you are cooking too hot, turn down the burners. Notice how the natural juices sizzles just under the tuna to enhance juiciness. Your grill never sounded so good.

    • Grilled Portobello mushrooms
    • Fresh spinach salad with crumbled bacon and chopped pecans, dressed
