Grandma's Chicken Casserole - Recipe

Such an easy meal, and all you need is a salad to go with it. My kids love it, and the left-overs are even better!

Directions
  • Combine boxed rice and seasoning mix, mayonnaise, chicken soup, evaporated milk and chicken broth.
  • Saute celery, onion, and green pepper until soft in butter. Add celery, onion, and green pepper to rice mixture.
  • Add cheese and broccoli florets and mix well.
  • Pour into greased 13 X 9 casserole dish and top with Durkee french fried onions. Bake at 350 degrees for one hour.

-1 package Rice-O-Roni - chicken flavor
-1 cup mayonnaise
-1 cup evaporated milk
-1 can cream of chicken soup
-1 cup brocolli florets
-1/2 cup chopped onion
-1/2 cup chopped green pepper
-1/2 cup chopped celery
-1 cup chicken broth
-2 tablespoons butter
-1 cup shredded cheddar cheese
-1 cup Durkee french fried onions
