Healthy Banana Bread - Recipe

This is a recipe that I've used several times and modified to be lower in sugar and fat and higher in fiber.

Directions
  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, baking soda, cinnamon, and flaxseed.
  • Combine milk, eggs, veg. oil, bananas, sugar, vanilla extract, applesauce until smooth.
  • Mix both together and place in a greased 9 x 5 bread pan, add walnuts, and bake for 45-50 min or until fork comes out clean.

Ingredients
-2 cups wheat flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1/2 cup sugar
-2 teaspoons cinnamon
-1/2 cup milk (can use soy milk or low fat milk)
-2 eggs (or egg substitute)
-1/2 cup vegetable oil (or substitute some of this with apple sauce)
-3 ripe bananas
-1 teaspoon vanilla extract
-1 cup chopped walnuts (optional)
-2 tablespoons ground flaxseed (optional)
